Falafel is usually served as a sandwich wrapped in pita bread, and outside the Middle East, the term "falafel" commonly refers to this sandwich—falafel in a pita is typical street food or fast food. Along with the falafel balls, which may be crushed onto the bread or added whole, topping variations are usually included. Falafel balls may also be eaten alone as a snack or served as part of a mezze. They are also used as a vegan alternative filler to a Döner kebab in many countries.
Each ethnic group brought its own flavors to falafel-making. The original Egyptian dish was made with fava beans; as falafel moved northward, cooks substituted chickpeas. Until recently, Israel’s most notable contribution to its evolution has been to cram novel accompaniments, from shredded beets to French fries, into falafel sandwiches. Yemenites added cardamom, cumin, turmeric and hot peppers. Eastern Europeans, Persians, Ethiopians, Iraqis … all added their own taste.
